Named after the tarot card, our Gose style beer is fermented using a natural wine yeast and aged for 6 months in a terracotta amphora. The High Priestess sits at the threshold of the conscious and subconscious realms, the seen and the unseen, and is a symbol of abundance, fertility and the divine feminine. She teaches you that the world is not always as it seems and more profound unseen influences are often at play. Placed under your nose, this has all the aromas of a Muscadet Sur-Lie, a white wine from the Loire Valley made from Melon Blanc and aged on the dead yeast cells that fermented the juice into wine. On the nose you get hints of pebble beach, sweet honeysuckle, puffed wheat and a lemon citrus zing. On the palate there’s plenty of acidity, almost cooking apple sharp but the mouthfeel is waxily soft and that lemon becomes wonderfully pithy over the the pebble stone mineral freshness. The finish is lightly savoury with a touch of coriander seed and green olive.
